Little Snitch is great. You need to have a strong understanding of networking and the apps that you use, to use it successfully. It is great at opening your eyes to what apps are trying to connect where, and by catching a cap you can investigate what they are sending. How much data am I sending/receiving? Have you been using 4 beta or are you still on 3? If the former, what's your take on the changes? And how stable is the beta? I am always impressed how many connections Microsoft Office for Mac tries to open when starting it. All Versions I don't buy this argument. The canonical usecase is to block a program from accessing the internet at all. It blocks updates, sure, but you still end up more secure if there's no network in or out at all. Local applications should be able to deal with running offline.

I don't know how you imagine this would work. If I load up a GitHub PR in my browser and then swap to my editor, will the page update when I get a review comment 30 minutes later? If I launch a program and it immediately phones home, is that blocked?
Little Snitch used to have a semi-useful Network Monitor window that operated separately from its configuration app that showed you a chart of inbound and outbound activity, what apps and system tools were in use, and provide some controls. This has been overhauled into something that’s vastly better at visualizing what’s going on and controlling actions. It’s a real control center if you need one.
Hands off is one of the most trusted applications and alternative to Little Snitch when it comes to network privacy. It is also an all-rounder application that gives protection both as the network firewall and application-specific firewall. It controls both inbound and outbound traffic of an application.

While viewing the Map or using Little Snitch's rules window you can select different apps and processes and use a small switch to allow or deny network traffic by flipping a small Rule Management switch.
My LS experience: Most of the time, I was not qualified to make a reasonable call when deciding whether or not to block certain connections.
